medicinal dishes

Medicinal dishes are cooked with edible medicinal herbs.
They are delicious while at the same time have health healing effects.
Typical dishes are stewed squab with American ginseng and
Chinese caterpillar fungus, steamed calipash with ginseng, and beef tendon
stewed with seeds of Chinese wolfberry.


Stewed Pigeon with Ginseng and Cordyceps Stewed Pigeon with Ginseng and  Cordyceps

    Materials:
    one young pigeon
    5g American ginseng slices
    2g cordyceps (Chinese caterpillar fungus)
    3g fruit of the Chinese wolfberry
    1000g soup stock

    Preparations:
  1. Cut the pigeon in half, clean and scald, transfer to a bowl.
  2. Put soup stock, salt, MSG, cordyceps, ginseng slices, wolfberry fruit and minced ginger in a pan and season, pour into the bowl and steam for two hours.


Duck with Chinese Caterpillar Fungus Duck with Chinese Caterpillar Fungus

    Materials:
    15g Chinese caterpillar fungus (cordyceps)
    1 duck (1000g)
    1000g soup stock

    Preparations:
  1. Boil the cleaned duck till almost done, with a bamboo skewer make several small holes in the breast of the duck.
  2. Soak Chinese caterpillar fungus in tepid water till soft, then put inside the duck.
  3. Put the duck into a pot, add salt, scallion, ginger, cooking wine and duck soup, tightly seal the pot and steam for 3 hours, pick out the scallion and ginger, add MSG and pepper.

    Materials:
    12 slices of antler
    shark's fins soaked in water
    dried scallops
    chicken breast

    Preparations:
  1. Put the antler slices and dried scallops into separate bowls, stir with seasonings, steam till tender.
  2. Mince the chicken breast, add egg white to make a chicken paste.
  3. To half the chicken paste, add rice powder to make a white paste.
  4. Stew the soaked shark's fins till tender, coat first with chicken paste, then with the white paste, stew, remove to a casserole, drop in antler slices, scallops, add seasonings and steam for an hour.


Mutton with Candied Dates Mutton with Candied Dates

    Materials:
    1000g mutton
    500g candied dates
    75g preserved orange cakes
    50g lotus seedpods
    100g sugar
    50g honey

    Preparations:
  1. Stone the candied dates, insert orange dices as stones.
  2. Scald the mutton slices and drain.
  3. Drop the mutton slices into 8-fold hot oil, quickly saute, remove.
  4. Put the lotus seedpods in a bowl, around them arrange the candied dates, place the mutton slices on top of the seadpods, sprinkle with white sugar and steam for 3 hours, turn the bowl upside down on a plate, pour on heated honey.


Turtle Soup turtle soup

    Materials:
    1 live turtle
    10g Chinese caterpillar fungus (cordyceps)
    turtle eggs
    5 sections of scallion
    3 pieces of ginger
    50g chicken soup

    Preparations:
  1. Wash the live turtle, remove its head and claws, and cut into slices.
  2. Wash the caterpillar fungus in tepid water.
  3. Season oil in a wok with scallion knots and ginger slices, drop in the turtle slices, turtle gizzard, liver slices and salt, saute for 5 minutes, transfer to a casserole.
  4. Add caterpillar fungus and clear chicken soup, stew over a high heat for 2 hours till the soup is concentrated, transfer to a Chinese steamer and steam for half an hour.
